Vanilla flan with caramel and Bora Bora Sea Salt pure

Components

This dessert includes:

  • Vanilla flan

  • Salted caramel sauce

  • Bora Bora finishing salt


Preparation Time

30 minutes + chilling
Serves 4


1. Vanilla Flan

Ingredients

  • 250 g QimiQ (uncooled)

  • 7 tbsp powdered sugar

  • Vanilla extract (to taste)

  • 200 g crème fraîche

Method

  • Whisk the QimiQ until smooth.

  • Add the powdered sugar, vanilla extract, and crème fraîche.

  • Mix until fully combined and silky.

  • Spoon the mixture into pudding moulds.

  • Refrigerate for at least 4 hours, or ideally overnight to set.


2. Salted Caramel

Ingredients

  • 150 g sugar

  • 0.5 dl water

  • 1 tbsp salted butter

  • 0.5–1 dl single cream (depending on desired texture)

  • Bora Bora Sea Salt – Pure (to taste)

Method

  • Add the sugar to a clean, dry saucepan and melt gently over medium heat, without stirring, until golden.

  • Carefully add the water and butter at the same time (note: it may splatter).

  • Continue heating and stir until the sugar dissolves again and the mixture becomes smooth.

  • Add a pinch of Bora Bora Pure Sea Salt and adjust to taste.

  • Stir in the single cream gradually until the caramel reaches the desired consistency.

  • Remove from heat and allow to cool.


3. Plating & Finishing

Method

  • Carefully unmould the chilled flan onto serving plates.

  • Pour the cooled caramel generously over the top.

  • Finish with a delicate sprinkle of Bora Bora Sea Salt – Pure.
