Shrimp Tartare with Avocado and Calamansi Marinade

Ingredients — Shrimp & Marinade

  • 20 fresh shrimp

  • 50g hazelnut oil

  • 40g chopped ginger

  • 150g calamansi lemon vinegar (Huilerie Beaujolaise)

  • 30g white celery leaves

  • Bora Bora Sea Salt

  • Zest of 1 lime


Ingredients — Avocado Marinade

  • 1 avocado

  • 250g virgin pistachio oil

  • 12g raspberry vinegar (Huilerie Beaujolaise)

  • Bora Bora Sea Salt


Method — Shrimp Tartare

1. Prepare the shrimp.
Shell the shrimp and slice them in half, removing the vein. Cut into small cubes and keep chilled on ice.

2. Make the marinade.
Combine calamansi vinegar, chopped ginger, hazelnut oil, and lime zest.

3. Add celery and season.
Wash and finely chop the celery leaves, then add them to the marinade.

4. Marinate.
Add the shrimp, stir gently, season with Bora Bora Sea Salt, and refrigerate.


Method — Avocado Marinade

1. Prepare the avocado.
Peel and dice the avocado.

2. Marinate.
Mix with virgin pistachio oil and refrigerate for 30 minutes.


Presentation

  • Add the raspberry vinegar to the avocado mixture.

  • Spoon the marinated avocado into small verrines.

  • Top with the shrimp tartare and finish with a pinch of Bora Bora Sea Salt if desired.
